NOTES FROM MY KITCHEN. No. 20

Stage I

I sautéed fennel, onions and chopped garlic

Stage II

I added oregano, red pepper flakes, bay leaf, dry white wine (I substituted with white wine vinegar) & whole peeled tomatoes (Break them up) – sautéed a little longer

Stage III

I threw in my shrimp. my frozen cod pieces. instead of a seafood blend I added garlic and herb pork sausage (not necessary & not in the recipe but still works)

Stage IV
I pressure cooked and Voilà: Cioppino (my version)
